Can I track conversions that happen offsite (Stripe, app signup, Calendly)?

Sometimes, but cross-domain flows can introduce conversion tracking limitations.
Clean approaches: redirect back to your domain for a confirmation event, send downstream conversion events back to Tailor from your analytics stack, or use GA4/Amplitude/CRM as source of truth for final conversion reporting when joining is imperfect. The core issue is joining ‘variant exposure’ to ‘conversion’ across domains.

Caveats
